VEGGIE BURRITO BOWL

Ingredients
  1. 1 tablespoon coconut oil
  2. 1 cup black beans, cooked
  3. 1 cup brown rice, cooked
  4. 1 yellow capsicum, chopped
  5. 1 tomato, chopped
  6. Dash of cumin
  7. Dash of cayenne
  8. Dash of sea salt
  9. ¼ cup parsley, chopped
  10. 1 avocado, chopped
Instructions
  1. In a medium saucepan, heat 1 tablespoon coconut oil over medium-high heat. Once oil is warm, add yellow capsicum, tomato, cumin, cayenne and sea salt and sauté 4-5 minutes until cooked. Add the black beans and cooked brown rice and sauté another 4-5 minutes. Add parsley and remove from heat. To serve, top with the avocado.
Notes
  1. This is also perfect for a wrap filling.
