The weather is warming up here in Aus, and I don’t know about you, but that means salads for me!

I love salad, but soon get bored with the same old lettuce, cucumber, tomato variety. Plus they go soggy really quickly when you add dressing, so they’re hard to make ahead.

Salads are an excellent source of nutrition and proteins as well as being the key to a balanced diet.

We often think of salads as a ‘diet’ food but you don’t need to be on a diet to eat salads. They can be a side for your main meal or a meal on their own!

Many studies find that even the healthiest of people should skip one meal a day and eat a salad instead. They help you look and feel younger as they are great for skin, hair, and body.

Now that you’re motivated to eat some salad, here are three easy to make ahead salads that won’t take much of your time and taste delicious. They all keep for a few days in the fridge, which is why I call them grab and go!

Thai Peanut Quinoa Salad

Chickpea Salad with Carrots

Mexican Kale Quinoa Salad

I make them early in my week so I have a quick, easy and tasty lunches, ready to go. These recipes are vegetarian, so feel free to add more protein if you want. Grilled chicken, tuna in spring water or avocado are just a few options.

If you’re trying to lose a few kilos, be careful of your portion sizes – we often eat more than we need.  And no matter how healthy  your meal is  – too much is just too much!

Share your favourite salad in the comments below – I love to try new ones!
